Fruit Loaf: Cranberry and Apricot Bread Recipe

When it comes to meals that are both quick and healthy, finding something can be a struggle. So I thought that it was time to take it back to the basics: bread. In the modern world, society has transformed the humble loaf into sandwiches, croutons, puddings... so I decided to make my own, and fill it with dried fruits and nuts for a bit of extra bite and zing.

The basic recipe is:
500g plain flour
1 sachet yeast
300ml tepid water

After that, simply add whatever extra bits you would like, for vitamins, essential oils and flavour. I opted for cranberries, apricots, sultanas, pumpkin seeds and sunflower seeds, but there is definitely more to add, and next time I may also experiment with essences and spice (very autumnal!)
After mixing, cover the dough and leave it to rise, before rolling into a round loaf shape.
It needs around 40 minutes in a pre-heated oven, or 50 in a non-pre-heated, at around 180 degrees C.
Then serve with jam and fresh strawberries for a light lunch bursting with berry goodness :)
