Three fast & healthy vegetarian meal ideas

If you're a student like me, you have a time-consuming job, or you're just new to cooking and want to start at the basics *whilst also still eating things that are nutritious and tasty* this is the post for you. These meal ideas work as both lunches and dinners, they're super speedy, and they're vegetarian (or vegan, depending on the types of pasta and noodles you purchase!). Hope you enjoy!

Oven-baked baby potatoes & courgettes, with hummus & spicy salad

Ingredients:
5 baby potatoes
1 courgette
1 tub of hummus (you'll only require 1 or 2 scoops)
For the salad, it is a matter of choice - everything is optional! But you may want to include some lettuce / cabbage, peppers, carrot spirals, or edamame beans, and then top with a chilli sauce


Recipe:
Halve your baby potatoes and chop the courgette into rounds of a similar width
Toss in olive oil and pepper, and oven bake for 25 minutes at 200-220 degrees (depending on your oven temperature)
Once roasted, serve in a bowl with a scoop of hummus
If you have salad vegetables, finely slice them and drizzle with a spicy sauce
Voila!

Spicy noodles and vegetables

Technically this sounds like a stir-fry, but I actually boil this meal - which gives it the unintentional health benefit of having less oil, and it also cooks in about 4 minutes total


Ingredients:
For the stir-fried veg, once again, it is a matter of personal preference! You can even buy pre-chopped vegetables for stir frying (the Sainsbury's one is great!), but if you have an array of farmer's market vegetables at your home you may wish to include: cabbage, broccoli, peppers, beansprouts, and carrot spirals
My noodle of choice is the 'hot and spicy' Indomie noodles!

Recipe:
Add your noodles to your pan and cover them with boiled water
Let the noodles boil for 3 minutes, and then add all the veg
Drain the water and then add your spice / soy sauce sachets to the mix
Put the pan on heat (whilst stirring) for about 30 second to 1 more minute
And it's ready!

Tagliatelle and Mediterranean vegetables

Ingredients:
Fresh tagliatelle
1 pepper
1/3 oinion
Pasta sauce


Recipe:
Add your tagliatelle to a pan and coat with boiling water
Add some salt or a stock cube for more flavoursome pasta
Boil for about 3 minutes
Chop up your pepper and onion
Drain the pasta and stir in the veg
Add your pasta sauce, and return to heat for 1 minute
Enjoy!
